VSOP's Aged White Balsamic Vinegars are made in Modena, Italy using Ultra Premium grape must from Trebbiano & Lambrusco grapes. The must is cooked (but not caramelized) in a copper kettle over an open wood fire according to tradition. The vinegar is progressively aged through a battery of seven new (which have not been fired on the inside) wood barrels (cherry, oak, ash, chestnut, mulberry, juniper, acacia) of successively smaller sizes, according to the age old Solera Method. The result is a bit more acidic with a crisp, clean taste & a lighter color.
