Chicken Bhuna is probably the most common type of Bhuna, but the flavours can combine equally well with white fish or mixed vegetables. This paste is designed to be used as an overnight marinade for the best results. However a quarter to half a jar can easily be added to a warm pan of oil and the ingredients cooked straight away. Directions In curries: Heat 2 tablespoons of sunflower oil in a pan, add a medium diced onion and fry until softened. Add 224g (8oz) diced chicken breast or tofu and ½ jar of Geo Organics. As a marinade: Score the meat or fish and rub a thin layer of this paste over it, really rubbing it in. If the paste dries out too quickly, add a little lemon juice to help it flow again. Leave for a few hours, then fry the meat in a pan or add it to curries.
